Northern Lights on Food Conference V - Boosting structural food science
The conference “Northern lights on food – boosting structural food science” brings together leading scientists in the field and focuses on the study of food structure, the interrelationship between structure and function, and how a combination of techniques is necessary to fully understand the changes occurring in structure and function of food in complex matrices.

Northern Lights on Food - Kunskap och innovation för en grön omställning inom livsmedelssektorn
Välkommen till heldag för diskussioner om industrins behov för ökad kunskap
Sedan september 2021 har vi på Lunds universitet drivit ett projekt för att stärka kunskap och innovationen inom livsmedelssektorn. Projektet har finansierats av Tillväxtverket, Europeiska unionen (regionala utvecklingsfonden) och Region Skåne.
Det övergripande målet är att skapa förutsättningarna för att med hjälp av de metoder som ESS och MAX IV kan erbjuda fördjupa förståelsen av hur livsmedelsstruktur och förändringar under bearbetning påverkar funktion såsom hälsa och välbefinnande. Syftet är att säkerställa en övergångtill ett miljömässigt, socialt och ekonomiskt hållbart livsmedelssystem enligt Agenda 2030.
