Learn more about Northern Lights on Food

The Northern Lights on Food advances science to create sustainable food systems for health and well-being. We build knowledge and competence in applying MAX IV and ESS technology to reveal the fundamental structure of food.

We bring together expertise in food science and technology together with experts in characterization methods using neutrons and X-rays, in order to generate new knowledge and cutting-edge technology within food science.

We aim to impact on the design of instruments and development of neutron and X-ray techniques, advance data analysis methods to fit the food-specific research questions.

Northern Lights on Foods is open to food researchers and product developers from food industry, research infrastructures, universities and institutes. We help and support SMEs to access the advanced technologies of ESS and MAX IV, and in particular those with challenges of such a nature that innovation and green conversion are necessary. We will educate and train a new generation of food scientists and technical experts.

Advancing science

Northern Lights on Food will advance our knowledge of food structure, processing and function to meet the challenges of the food system.

Developing tools

By using and developing new, advanced tools available at MAX IV and ESS, we will unravel he complexity of food through unsurpassed length and time-scale resolution.

Building competence

Use of the advanced technology requires the education and training of a new generation of food scientists and technical experts, that can improve future sustainable food system.

Heading for the future

The research projects in Northern Lights on Food will have a broad impact in the entire food sector, which includes the structure of the food raw material, the food structure during processing, materials in contact with food and the structure of food, health and well-being. We aim to utilize results from both basic and applied research and provide future researchers with unique cutting-edge expertise.

Our long-term vision is to establish the European Food Laboratory, and international institute for food research, located in Science Village Scandinavia next to MAX IV and ESS.
